How to Make Sweet Potatoes Special with No Sugar Added
Thanksgiving is coming, and to help you celebrate, I am sharing a sweet potato recipe that is healthy as well as delicious. It is made with pure and simple ingredients, no sugar needed. It became a tradition in my family for Thanksgiving because my father was hypoglycemic and another family member was diabetic. Whether the whole family is healthy or there are special needs, this is good for everyone and tastes so good, too. Age doesn’t matter when you eat right!
I found this recipe in Laurel’s Kitchen: A Handbook for Vegetarian Cookery and Nutrition by Laurel Robertson, Carol Flinders & Bronwen Godfrey. When I was at home every day raising my children, I wore out that cookbook, it was so full of great recipes. When the book wore out, I replaced it with The New Laurel’s Kitchen by Laurel Robertson, Carol Flinders, and Brian Ruppenthal because I could no longer find the original edition. But the new edition does not have the Sweet Potatoes and Apples recipe, and it is just not the same as the first book. If you find the original cookbook, snatch it up and let me know if I can get a copy too!
Here’s the recipe:
Sweet Potatoes and Apples
(Choose the size of casserole dish you want to use, then just cut up as much as you want to make, filling the dish.)
Slice sweet potatoes and place them in your baking dish, alternating with slices of apple and scattering raisins around as you go. (Chopped nuts, of course, are perfectly appropriate here too.) Sprinkle them with lemon juice, dot with margarine, and dust with cinnamon. Cover and bake in a medium oven (350 degrees) for about an hour.
Tips:
- Cut as you go.
- What you find at stores is usually yams, not sweet potatoes. Use yams. They taste better than actual sweet potatoes, too.
- Do not use a microwave! It did not work out when I tried that.

You are welcome, Ruth! The New Laurel’s Kitchen just doesn’t have the same great recipes as the original. And I still make this sweet potato casserole for my family every year. It’s a blessing for those who have diabetes or hypoglycemia.
